SIMPLY COCONUT MILK ICE CREAM

I'm such a visual person. As I was scrolling down Pinterest one day, I came across this velvety, delicious-looking ice cream. I am not a vegan ( I'm mainly vegetarian / I love fresh fish) , but I love trying vegan recipes that taste good rather than artificial, and ones that use whole, real ingredients. 

Also, real coconut products  are so good for our bodies, skin, and hair . . . 

Keep in mind that although it's much healthier than processed ice cream, it is still a dessert; so as I recommend with everything as my eating philosophy - moderation is key! Enjoy this treat after dinner paired with a cup of mint tea. 

INGREDIENTS (using ice cream maker)

  • 2, 15 ounce cans of organic full fat coconut milk
  • 4 large dates, pitted (stevia sugar free option)
  • ½ teaspoon vanilla extract
  • dash of cinnamon
  • pinch of sea salt

INGREDIENTS (without ice cream maker)

  • 1 banana, frozen
  • ice cubes to thicken
  • 2, 15 ounce cans of organic full fat coconut milk
  • 4 large dates, pitted (stevia sugar free option)
  • ½ teaspoon vanilla extract
  • dash of cinnamon
  • pinch of sea salt

 

METHOD

1. Chill the full fat coconut milk cans overnight.

2. Combine all ingredients into a high speed blender or food processor and blend until thick and creamy.

(using blender):

3.  Use frozen bananas and ice along with the remaining ingredients to have an instant frozen treat.

4. You may also put in the freezer for about 30min-1hr to "harden" up if this texture is still too soft.

(using ice cream maker):

3. If you have one, you can use it and get the best results. After blending, you simply add the mixture to your ice cream maker and let it do the work for you.

4. Enjoy chilled with typical ice cream garnish and toppings.
